Sitting atop ivy, the recently refreshed uccello takes cues from the Southern Italian coastline with an elegant menu featuring light, fresh flavours. Our kitchen works closely with small-scale NSW farmers and producers, with head chef Noel Jelfs ensuring only the highest quality ingredients make it to the plate. Traditional Italian techniques – such as wood-firing – inspire the seasonal menu, with a grand wood-fire oven sitting at the heart of the kitchen.
