hemmesphere

A dimly lit, opulent bar with attentive table service, hemmesphere is the place to go when you want a night out with your favourite cocktail, wine or spirits. Not only can they provide table service but also take care of any food needs as well from the sushi e kitchen and have plenty of space for groups of up to 20 people!

Mr Wong

Mr Wong's Cantonese-style food is served in a larger-than-life way that spreads over two levels of the restaurant building and seats 240 people, yet somehow manages to feel intimate with dim lighting and moody jazz music!

When you visit Mr Wong, be prepared to have your taste buds tantalised by an extensive menu of delicious dishes from Chinese dim sum all the way up to barbecue ducks and other crowd favourites! We pride ourselves on excellent service paired with a well-curated wine list so that every customer has something they can enjoy while building lasting memories in our restaurant.

Palmer & Co.

Your night at the Palmer & Co. starts before you even arrive; walking down an alleyway, through a nondescript door, and underneath the city streets. From that point on you could be in another place and time with our regular sets of live music setting the mood of refined debauchery which is electric with people everywhere enjoying themselves for any reason they can find!

Our cocktails go way back to the prohibition era. You can feel it in every sip and see it on each of our walls, which are covered with black-and-white photographs from decades ago (that's right). My favourite drink is a classic Manhattan made just like they did during Prohibition - strong enough for your taste buds but smooth all at once. When you're not sure what flavour or how many drinks might suit your fancy, we've got champagne that will have something perfect for everyone! If you need any help deciding what suits your tastes best then don't hesitate to speak up: The staff here would be more than happy to answer any questions about this place as one bartender said "I've been working here since I was 15 years

Establishment Bar

A multi-award winner, Establishment Bar is a true Sydney icon. The iconic Establishment Bar exudes style and sophistication. Flanked by lines of magnificent iron columns, the centrepiece 42-metre-long marble bar is the centrepiece of this historic venue which offers a unique experience with traditional Thai to classic Aussie pub food on its menu. Whether you're looking for indoor or outdoor dining options, eat-in at the elegant interior or enjoy drinks out the back where there's also an established garden that serves seasonal cocktails!

Tank Stream Bar

Tank Stream Bar is a cosy spot to take your date or catch up with friends. The wine list will suit any taste and the bar snacks are perfect for pairing with drinks!

Firstly, contact the VenueNow team by submitting an enquiry or speaking to one of our team members online or over the phone. We'll need to collect a few details from you, such as your:
- Event type
- Number of people attending
- Preferred event date & time (and if this is flexible)
- Budget (per person or total)
- Room layout
- Food and beverage / catering requirements
- Any other requirements

Once we've gathered these details, the VenueNow team will contact the team at Establishment to check:
1) Can they host the event on your preferred date / time? If not, what are some alternate dates / times?
2) What is the estimated cost based on your event requirements?

This process tends to take around 1 business day on average to receive a response from the venue. Once we've received a response, the VenueNow team will contact you as soon as possible.

If you're happy with the proposed price and dates / times, the VenueNow team will connect you with Establishment to finalise your booking (which may include a site visit if you choose to do so).

VenueNow provides this service free of charge to you as we are paid a small fee by Establishment if you book via us.

After being abandoned, the dilapidated George Patterson House was rescued by Merivale CEO and owner Justin Hemmes. With his vision in mind to turn this dream into a reality, he set out to transform it from its stately roots back into an exquisite place where locals could come together every day of the week.

Located in the buzzing heart of Sydney city, Establishment is an iconic and impressive reincarnation of a grand 19th-century tavern. With many original features still intact, it's home to historic establishments such as The Establishment Bar (a prohibition-style bar), Palmer & Co., hemispheres (an opulent cocktail lounge) - all with stunning views over Circular Quay. There are also contemporary additions such as Mr Wong(sushi e). It has become one of Australia's most talked-about destinations for its fusion dining options which have made international headlines.

Classic elegance meets a pitch-perfect party atmosphere. It was once the burnt-out ruins of the old department store, the former George Patterson House, transformed into a perfect location for your next event!

The ballroom in the hotel has a capacity of up to 300 guests in seated events and 400 guests in cocktail settings. With its flexible configurations, this grand room can cater for everything from networking events, business meetings, product launches or milestone birthday celebrations!

As the Establishment Hotel is located on George Street in the Sydney Central Business District, a lot of Australia's popular attractions are nearby. The hotel is only a 15-minute walk from the famous Sydney Opera House and The Royal Botanic Gardens; The Harbour Bridge and Sydney's city centre are also a 20-minute walk away. 

By train, the closest station is Wynyard Station. Take the George Street exit, turn left and walk down George Street until you reach number 252. By Ferry, Establishment is a 10-minute walk from Circular Quay wharf. 

Guests can park at a nearby secure parking lot, just within a 5-minute walk from the hotel. Take note that reservations are needed. The hotel can also organise private transfers. 

Establishment Bar and Restaurant is the perfect place to be. Friday night sees the trendy bar abuzz with an after-work crowd while​ on other days​ it is the ideal space to enjoy the best cocktails and views of the high-rise buildings and lush greenery.

Saturday: 12:00 pm - until late

The menu has everything from traditional Thai to classic Aussie pub food, such as fish and chips and our take on chicken schnitzel.
