Love from Melbourne Hospitality People. Captain Baxter is inspired by the coastal location and heritage of the St Kilda Sea Baths building. A palette of white, timber and rattan, including playful wallpaper and perforated textures are inspired by beach bungalows of the 1920s. A fully retractable roof that lets the sunshine pour in and brings guests even closer to St Kilda’s foreshore. Captain Baxter is Melbourne’s go-to for lunches under the sun, drinks at sun-down and relaxed beachside dinners. Sit back, put your sunnies on and feel the sea breeze. Matt Dawson, group executive chef of St Kilda Venues has been joined by Timothy Martin (ex The European and Taxi Dining Room) and Adrian Hawkins (ex Est and Bistrode, Sydney). Put simply, their menu represents food that people want to eat by the beach; relaxed and casual dishes, with fresh and delicate flavours. The seafood focused menu is overlayed with subtle Asian influences to create seasonally focused dishes that embrace Captain Baxter’s enviable location.

Captain Baxter never misses. I'm here almost every time their menu rotates, and it's always something exciting and delicious. The chef's creativity really shows, and every dish feels fresh, balanced, and full of flavour. The owner/manager should be incredibly proud of the team they've assembled. The service is warm, attentive, and consistent, which is rare these days. You can tell everyone here genuinely cares about the experience they create. 🌊

We had our wedding at Captain Baxters on the 23rd of October 2025. It was the most incredible day we could have hoped for. The staff at CB went above and beyond for us and our guests. The manager and event management team were so accommodating to our needs leading up to the day, it made the wedding planning process so much easier than I was anticipating. We are so glad we had our wedding here and we look forward to revisiting the memories of the day by coming back!

I had the best time at Captain Baxter’s bottomless brunch last Sunday! The atmosphere was amazing — great music, beautiful view, and such a fun vibe all around. The staff were super friendly and made sure our glasses were never empty. My friends and I had so much fun and can’t wait to come back again soon. Highly recommend for a perfect Sunday out!

A delightful experience overall! The cocktails here are definitely a highlight – wonderfully crafted and absolutely delicious. Each drink was a real treat. The food also impressed with its freshness and quality. You can tell they use great ingredients, and everything tasted vibrant. The only slight drawback was the price point, which felt a little higher than average. However, considering the quality of the cocktails and the freshness of the food, it's still a worthwhile spot for a special occasion or when you're looking to indulge a bit. The atmosphere and views are also a definite plus. I'd happily return for those fantastic drinks and fresh bites!

Thank you for being open to listening about our complaints. I still can't believe that you unintentionally or intentionally skiped orders from some people (9 of us) and finaly delivered ll ordered drinks to our tabe after 40 minutes and 3 reminders. What I can't understand is that the order has been taken for food but couple of people have been easily skipped. I personally pointed they still there and they are not invisible. Finally on our satisfaction the staff has been changed and suddenly we have been all visible and acknowledged. Thank you so much to second lady staff who was much more polite,helpful and knowledgeable. Food was ok but nothing from all we have ordered wasn't special to say it was outstanding. Thank you for having us on Australia day, but we shall take time to come back here. Mostly because of the poor ser.
