Overall the dining experience was very enjoyable. The food was delicious as were majority of the drinks we tried. The wait staff are attentive (sometimes almost too attentive) and very friendly. The only down sides were that it was freezing with the aircon on full blast, all of our plates coming out at once which meant some items had started to cool by the time we got to them and feeling like we were being rushed/pushed out towards the end of the booking even though we knew the time we had to be finished by. Would definitely still come back though as I am nit-picking the small stuff.

We went to dinner at the George as it was next to the show venue. Absolutely lovely foods! We had prawn and green dumplings, burrata, and pork and green bao for entree. Then we share Pad Thai, green wok, and fish for mains. And that was plenty of food for the two of us! Many delicious cocktails as well, we got there just in time before the happy hours finished so we tried all of the 4 cocktails on the happy hour menu and we really enjoyed all of them. I saw an interesting cocktail being made so asked the staff what it was and ordered it. The Japanese Whisper was supposed to come with dry ice for dramatic at serving but the lady who ran our drink took the ice away before we could even take photos. Then the staff who looked after our table came past and asked why we had watermelon chunks in the cocktail glass when it was supposed to be eating along the drink separately. So I have to explain that the woman who dropped off the drinks told us that the watermelon is a garnish for the drink. The start of the evening was quite high and then ended at a disappointing note with the last cocktails that were not in the happy hour.

Food was very tasty and the service level and setting was excellent. We had come to Melbourne to celebrate my sister's 75th birthday and your restaurant waw our first family meal in Australia and it set the bar for the rest of journey thru Melbourne, hobart n sydney. TQ

We were returning from a Sunday matinee performance at the theatre and looking for somewhere open at 4:30 because we were quite hungry. We hadn’t eaten lunch, but it wasn’t quiet dinner time either. We walked into The George on Collins and had a fantastic meal. The staff was terrific. The kitchen wasn’t open for full service at that time, but they still catered for us, and we could order off the dinner menu, which we were grateful for. It was all wonderful, but my favourite was the chicken lettuce cups and pork spring rolls.

A Perfect Anniversary Evening at The George on Collins From the moment we walked into The George on Collins, we knew we were in for something special. The atmosphere was effortlessly chic, blending modern elegance with a warm, inviting vibe that made the space feel both upscale and comfortable. The service was nothing short of exceptional. The staff were attentive without being intrusive, and their attention to detail—especially in acknowledging our anniversary—truly elevated the entire experience. It’s rare to feel so genuinely taken care of at a restaurant, but they managed it beautifully. As for the food—wow. The bone marrow was rich, decadent, and perfectly balanced, while the clay pot noodles were bursting with flavor, comfort, and a depth that lingered long after the last bite. Every dish felt thoughtfully prepared and executed with precision. We left with full hearts and fuller stomachs. If you're looking for a memorable dining experience in Melbourne, The George on Collins is an absolute must
